Description

A tasty Thai inspired curry packed with authentic flavours.

Ingredients:

  • 50g panang curry powder
  • 500g chicken breast - chopped
  • 1 onion - sliced
  • 2 bell peppers - sliced (green or red)
  • 1 thumb ginger - grated
  • 5 cloves garlic - minced
  • 400ml coconut milk
  • 2tsp cornstarch
  • 50g light brown sugar
  • 1tbsp peanut butter (or peanut butter powder)
  • 1tbsp fish sauce
  • 1tbsp lime juice
Method:

  • Heat oil in a pan and add the onions, peppers, garlic & ginger, cook for 4-5 mins.
  • Add the curry powder, peanut butter and cook for a further 2 mins.
  • Add a the cornstarch to a small amount of coconut milk and mix until combined, add the remaining coconut milk to the pan and mix well.
  • Add the cornstarch mixture to the pan and stir till combined, add the chicken and simmer for 10-15 minutes until cooked through.
  • Stir in the sugar, lime and fish sauce, season with salt & pepper.
